I think appeals of one game suspensions get taken care of quickly, unlike the circus atmosphere around a four or six game suspension like Deflategate or Zeke.
I doubt very much that One Game will be overturned, especially when some thought it would be for longer. So, the only reason to appeal a One Game suspension is to set the record straight from Gronkowski's perspective, i.e., that he's getting held and pushed all game and, while he shouldn't have done what he did, he didn't do it out of the blue.
But if Appealing means there's a reasonable chance that he misses the Steelers game, then I think it's in the interests of the team that he forego the Appeal. If the Pats can't beat the Lolphins in Miami without Gronk, they have bigger problems, but they're going to need their biggest receiving threat in Pittsburgh.
If it were two games, there would be nothing to lose by Appealing, since he'd be out for the Steelers game.
I know that means putting pragmatism over principal. But the Pats have a real shot at the SB...
