Dorsett has 198 yards receiving through 8 games. If Edelman, Hogan, White and Gordon stay healthy (or out of trouble), Dorsett will probably come in around 500 yards over 16 games. If any one of those guys misses time, he becomes the 4th receiver and may pick up the pace towards 1,000 yards.
Patterson isn't really competing with Dorsett for targets. He's more of a big target in traffic - bubble screens and unusual stuff out of the backfield where his size can get him to the next level. Dorsett is more of a four- or five-wide option.
I don't think it's a trust thing with Brady, really. It's just that the other guys get better separation.

Aside from whatever it is that Patterson may be doing, Dorsett is mostly redundant, especially on short-intermediate routes, boundary comebacks, intermediate crossers, etc. This is a good thing because it means there are a couple different roles he's able to back up.
Anyway, with a 79% catch rate on what was the highest number of targets from Brady for the first 3-4 games, I agree that "trust" doesn't seem to be an issue.
However, if everybody else stays healthy, 500 yards seems pretty optimistic. I'd guess 250-350 yds might be more realistic. I'm not going to compare him to Amendola in terms of quality or "clutchness", but - if you look at Dola's production in seasons when everyone else was mostly healthy, those are the kind of numbers he put up as the reliable reserve guy.
