In the Jets game when they got the holding call, the game clock stopped and didn't start until the play started, is this correct?

Inside 2:00 remaining in the first half, 5:00 in the second half and all of OT, that is correct.

Don't they run off 10 seconds or something like that though?

not for holding calls cause the play was happening where a false start the play is not and would be like using a timeout
