My understanding is that it's a forgone conclusion that Brissett won't be back in 2025. Given his ability to mentor and his experience in McDaniels system wouldn't it make sense to retain him for another year?

His starting days are over and his effectiveness in relief might be as well. Mentorship goes only so far under those circumstances. Aside from that, McDaniels' system reportedly will be different this go-round -- more hybridized, employing West Coast concepts. With this coaching staff an older vet/mentor type might not be as important, also considering Maye no longer is a rookie.
How the backup QB situation pans out will be interesting. I hope the Pats keep Milton and continue to develop him. A more capable older vet could be in the cards, I've seen Flacco mentioned.
I go back and forth on this. On the one hand, given the mess that was this season, I'd think that there's still quite a bit more that Maye (and Milton) could learn from a veteran. OTOH, IIRC one of Flutie or Testaverde, both of whom were brought in to mentor Cassel, basically retired because they felt that there really wasn't anything more they could do.

I just don't think Brissett provides much value as a mentor. His credentials are "he's been in the league awhile". But if you are Drake Maye, Brissett's a glorified back up and you were better than he ever was your first day of practice. This isn't Tom Brady sitting behind Drew Bledsoe who was one of the top QB's of his day. Or Aaron Rodgers sitting behind Brett Farve and at least having to say "this guys is a 3x MVP and SB winner who is about to hold all the stat records". It's not even Mahomes sitting behind Alex Smith who was a pretty steady franchise QB.
If you swapped him out for another career backup that wasn't connected for the Patriots, I doubt we'd be valuing his mentorship.
