The timing (split-sec0nd before defender arrives to break it up), the receiver's location (no room to spare at the sideline) and accuracy of the throw (tiny window, right in the breadbasket) are just incredible. Even more amazing is the fact this apparently was practiced and executed live against opposition.
And don't forget the part where Brady is under pressure as well. Gets hit 1/10th of a second after he releases the ball. Both guys make it look so effortless, but the difficulty level on both parts (throw and catch) is WAY up there.

The pressure is why I view Brady's throw as being the most impressive part of the hook up.
 
The defender could have tried to push him out of bounds but it's such a quick moment.
Defender definitely should have gone for the hit and caused him to come down out of bounds
 
Why is that not considered a hit on a defenseless receiver? Cooks had his back turned and couldn't see the guy coming and was catching the ball while the defender went for his head.

Yup.
If he had bodychecked Cooks instead of doing that bizarre jump and swing to the head there's no way Cooks would have landed in-bounds.

Doesn't take away from the throw and catch, though.

Said that a page back. Also said it reminded me of the Tuck Rule game. Brady got smacked in the head and that partially caused him to lose the ball. How that wasn’t a penalty, I’ll never understand that.

It wasn't a call because it wasn't against the rules back then. That's all you have to understand.

If that’s the case, why did Sugar Bear Hamilton get a roughing the passer penalty against the Raiders in 1976. Same thing and it cost the Pats a chance at a SB season.

And BTW, I know who Arch Stanton is , from the greatest western of all time.

At this point I think Brady has the other team beat when they're down by a TD in the fourth. The other team must be thinking, Brady has a 150% chance of beating us in this situation.
