I don't know how it became NFL conventional wisdom to do so, but teams run the ball way too much from their own 1 yard line.
In fact, you're actually more likely to give up a safety with either a run or pass with the QB under center than if you have the QB in shotgun.
And if you don't trust your QB to make a quick read and go with the safest throw, then you shouldn't trust him as your starting QB.
