When did receivers stop catching with their hands?

Every time I watch a game I see passes get knocked away or picked off because receivers wait for the ball to get into their body. That's nice if you have the time. However, I can't believe how many sure receptions get broken up because guys are waiting for the ball as opposed to using their hands to just go get the freakin' thing.

Is it just me?
