I got a new TV, 55 inch LCD. My provider is Dish, which does 720P or 1080i. Any advice as to which would better for the game? The 1080i seems...grainy?

720p and 1080i is almost the same quality..1080i only shows 540 lines of resolution at a given time where 720 is showing all 720 lines at a given time. now 720p and 1080p? huge difference. Stick to 720p.

I work at Best Buy and get these questions all the time

You never want to get interlaced for sports-viewing. Progressive-scan is best for viewing sports.
