Based on little, I think you are using a 4-3 because you use DT not NT. In a 4-3 I would take out Wilfork.

In the 4-3 pro-bowl Seymour plays DT. Would that be his natural position in a 4-3? Who knows? (I mean it is the pro-bowl...)

I forgot their names, but those two Vikings with the "Tainted Supplement" issue might be better in a 4-3.

i mixed in both types = dt 4-3 haynesworth, 34-nt- wilfork- 34-end-seymour-43-end-julius peppers and yes kevin and pat williams for the vikings are very good but starting to age in my opinion
