Ben Watson either has hands of stone or runs poor routes. Too many passes his way are off the mark or intercepted, which leads me to believe it is Watson and not Brady who is doing something wrong (either route or hands).

A couple of things on Watson that I noticed.

On the underthriw at the SD 5 Brady threw the ball just as Watson was making his break, Watson rounded off the cut if he had run the route better the ball would've been in the right spot. He doesn't run a crisp route. This is something Thomas does well.

On another throw at his knees, he didn't stand there he was backing towards the goal line even though he had the first down. He never comes back to the ball. He makes easy catches into tough catches.
 
Watson does not come back towards the QB to catch the ball. He is always "drifting" on his routes, trying to run before he catches the ball. The elite TE's catch the ball with their hands away from their body. Hopefully this attribute is teachable and not instinct.

I think it's a combo of both.

Watson certainly doesn't have Coates hands. However his routes seems to be fine. That is when he's allowed to run the route in the intended fashion. With my admittedly limited exposure to viewing the pass routes (TV coverage only) I think Brady is not able to throw many of the passes to Watson to the intended spot because of the double/triple coverage that Watson draws.
