1) Thomas is the more fluid receiver. Even though he hasn't played much, you can see that with your own eyes without studying film. He has superior moves and hands. He reminds me of Eric Johnson of the 49ers and Yale, though he's faster than Johnson.
2) Watson is a lot like Ben Coates, which is a good thing, but neither is/was the type of TE that can get open with moves or catch difficult passes on the move. Like Coates, Watson is a big target with speed and power, but doesn't possess exceptional hands or moves.
I think Thomas has a higher upside as a pass catching TE.
1) Eric Johnson is now available, BTW. He was released by NO after they traded for Shockey.
2) I don't think that Watson is a lot like Ben Coates at all. Watson is faster and catches more of his passes on the run, whereas Coates had better hands and made tougher catches in traffic. If the Pats faced 3rd/7, Coates would run 8 yards, turn around, and catch the ball with multiple defenders on his back.
