Here's a generic example :I hear people talking about the "value" of picks as if there is some sort of scoring system. What is used to work out the value of a pick when looking to trade it away ?

The real question is "What would it take for you to pull the trigger on a trade?"
No doubt there will be offers for the #7 pick, but how juicy does it need to be compared to the talent that may be available at #7
The ideal is to get both of Dallas' #1s. That's only even in the realm of possibility if McFadden is there, and even then I think voices of reason would talk Jones down. I'd be happy with a pick in the lower first round range and a 2009 first rounder, if that's conceivable. I haven't checked the trade value chart.
Honestly, I'm not sure how viable trading the pick would be. Well, as long as nobody's trading future picks to NE (you know NO one's going to do that after what happened to San Fran this year). Maybe trade down, but honestly who are they going to trade up to get? Matt Ryan isn't good enough to trade for. Heck, Quinn was better than Ryan and he kept dropping. There's no standout QB's in this draft, so a lot of teams will wait until the 2nd or 3rd rounds, I'd bet.
