I can think of a few:

John Hannah
Stanley Morgan
Mike Haynes
In the two-TE offense, Russ Francis

And while I loved Steve Grogan...



...this guy’s a proven big game backup QB. :)
 
I can think of a bunch more, but let's see what others come up with.
 
Bruce Armstrong. Was cut along with Coates after the ‘99 season.

Correction: I think he played the 2000 season.
 
Babe Parilli, Gino Cappelletti, JimLee Hunt, Mike Haynes, Sam Bam Cunningham.
 
Agree with John Hannah, Mike Haynes and Stanley Morgan.

Andre Tippett might be another.
