It looks like they are playing Cowboys-Giants, Jets-Browns, and Houston-Jax.

I'm really bummed, as I was stuck at a conference in San Diego this weekend, and only was able to follow the score not watch the game.

Anyone know where I can watch the game online? It seems I can't even buy it at the NFL site, but perhaps I am missing it.

If you have decent bandwidth and know where to look, there's nice 4GB x264 720p captures available via torrent (or usenet but you probably need a subscription to get usenet these days). The 2007 week17 Giants game is also still on torrent.
