Default OT: Tailgating Food Ideas

I started this same thread last year around this time. I was just asking for different ideas/recipes for food to bring tailgating. The thread was pretty interesting and had some really good ideas on it. But the thread got lost (along with the original cheerleader thread) when the board crashed. Oh the humanity. So...maybe we can try this again.

Anyone have any good tailgating food ideas/recipes?

Hot Mexican dip:

2 pckgs cream cheese
2 cans chili with beans
1 can chopped green chilis
3 cups shredded jack cheese

Spread softened cream cheese over bottom of casserole dish.
Spread Chili on top followed by green chilis
cover with cheese and bake at 300 degrees for 15 minutes
eat with tortilla chips

get a large, disposable tin foil bowl/pan.

put in 1 1/2 lbs frozen meatballs (i prefer the ones that come in a 3-lb bag at sams)
add a large jar of grape jelly (or whatever it takes to almost cover them)
add 1/2 envelope of chili seasoning

put it on your grill, stirring occasionally until meatballs are hot.

serve with toothpicks, or on hotdog rolls

buy a box of frozen taquitos, and throw them on low heat, turn as they toast.
the shells toast nicely, and they are the first hot food ready.

This is super easy and really good.........

Beer Boiled Shrimp & Kiebasa
=====================

2 pounds of unshelled uncooked large shrimp
1 pound of kielbasa
Six Pack of your favorite beer or ale
2 - 3 Bay Leaves
1 tbsp coriander seeds
Salt and Pepper (as desired)

Add the beer, kielbasa and seasonings to a pot or reinforced bottom foil pan (it gets heavy ) and bring to a boil. Simmer for ten minutes. Add shrimp and bring to a boil again until shrimp turns pink...it's ready!

Serve the kielbasa with rolls and bring some ice and kocktail sauce for the shrimp.

I like to bring this to cold weather games as I like to serve the shrimp chilled but the ice will work just as well....if you have the patience to wait for it to cool down

This is a recipe I adapted from our friends over at CHFF to make it tailgate friendly, and well, turkey fryers are just too much fun! They are a great, New England alternative to the blaze orange versions from Jills-land.

Maple, Sammy & Chili-Glazed Wings

Need:
3 lbs. Chicken Wings/Drummettes
Turkey Fryer
Canola Oil (or whatever you like frying in)
Ingredients for the Glaze
Large Mixing Bowl (metal or ceramic-plastic will melt when 400* wings are dumped into them)

The Glaze: (I'll make it beforehand and bring it with, just warm it up a bit)
-1 cup 100% Real Maple Syrup (none of that Mrs. Butterworth's stuff)
-1/2 cup Sam Adams Boston Lager
-1/4 cup Chili Paste
-3 TBS Corn Starch
-3 TBS Water
-3 TBS Malt Vinegar
-A couple of pinches of Kosher Salt

In a 1 qt. saucepan bring to boil the vinegar, Sam, maple syrup, salt and chili. Dissolve the corn starch in 3 TBS water and whisk into the maple sauce. Simmer for 1 minute and remove. Once it cools, I put it in a tupperware container to bring it along.

At the Tailgate:
Bring oil to 375-400*. Fry wings until done (about 11 1/2 minutes-I'll usually do 2-3 smaller batches only because they're easier to manage). Drain and dump into mixing bowl. Pour in enough glaze to coat the wings and stir.

Eat!

These could easily be adapted for grilling intead of frying (Par-cook wings: Boil Water. Add wings and simmer for 5 minutes. Remove and cool. At the tailgate, dip wings in sauce and grille until done-about 8 minutes at 400*). But why?
