We do, but of course sarcasm isn't simply saying the opposite of what you mean. That isn't sarcasm.
Sarcasm means "tearing of flesh" and is an insult aimed at someone, not a commentary on a state of affairs. Sarcasm needs to have a victim of the ridicule or derision.
What you are thinking of is irony, which is using words to convey the exact opposite meaning of what you are actually saying.
But with irony, the key is the you HAVE TO CONVEY the meaning that is the opposite of the words you are using. If a person, certainly in more than one person, reads the statement and doesn't realize it was supposed to be irony then it wasn't. Same with sarcasm. The onus in on the speaker (poster) to convey the meaning, not on the reader.
Don't take my word for it, check a dictionary.
