Because trading for the player gets you the player, if you wait till next FA you are bidding against everyone else that is interested, and where the player wants to go. The largest bid doesn't guarantee the player.

The best value they are going to get for Fields is probably after the draft....teams that miss out of FA, and the draft QBs they like....they won't get picks until '25, but it is in their best interest to be patient. They aren't likely to get much for him anyway.
