It's almost inconceivable that they don't. If you're taking on a great player vs. a so-so one, it has to up your level. OTOH, the same thing can be said about DBs and the WR they take on in practice.
The first thing posters often say about our O-line is that they protect good against big, physical D-Lines, but maybe not so well against really fast, get to the ball quick, style defenses.
That could be a result of who our O-Line practices against.
