Always a thread I enjoy reading...what are you all serving Super Bowl Sunday?

We'll be having shrimp cokctail, fried calamari, and stone crab claws for dinner, and some undetermined dessert-y thing around halftime (I'll figure that out tonight or tomorrow).

(edit: dear Lord, can we please stop with the **** censor? I get most of them, but blocking that word is just stupid IMHO)

Actually trying to replicate menus of my past Pats super bowl parties. Last one was for the game in Feb 05 against PHI and we had about 30 people. But since then we've had lots of marriages and kids in our circle of friends so tomorrow it'll be back to the roots - just me and three or four close buds keepin' it simple - wings, pizza, and beer....and hopefully my wife keeps the kids at bay for at least most of the game....GO PATS!
 
FINALLY we get to the important stuff.

Just finalized my menu. Sticking with New England foods, as I have all post-season (clam chowder v Broncos, roast beef sandwiches v Baltimore [it's a North Shore thing]).

Super Bowl Sunday: Jasper White's New England Fish Chowder. Clams casino for appetizer. Drink of choice will be the house white — water from the tap, something I do in big games just to stay alert and clear. Drinks after the game.

I started geoplanning my SB menus a couple of years ago when I made jambalaya because I so desperately wanted Indy to lose to NO. Did the same the following year when I made pierogis for the AFCCG so the Jets would lose and some sort of cheese thing (can't remember exactly) so GB would beat Pitt in the SB. Then I continued it with NE food this post-season. Hoping the trend of making the difference continues!

One more thing: I'm proposing NE fans all ban salsa from Super Bowl menus.

Since mid-March 2011, I've been following a hunter-gather or Paleolithic type diet (little to no cereal grains, rice, legumes, white sugar, most dairy... lots of animal protein & fat, vegetables, and fruit). My health and body comp. has changed for the much much better now (from near metabolic syndrome, severe allergy and asthma issues to a near lack of these symptoms today).

Therefore, it means I must get creative to find Super Bowl recipes that allow me to keep from falling off the wagon on Super Bowl Sundays. One of my favorites that I will be making tomorrow is for sweet potato fries.

Ingredients:

sweet potato (1 nice sized potato could serve 2-3 people)
butter (preferably from pasture-fed cows)
black pepper
thyme

Directions:

- preheat oven to 400 degrees Fahrenheit
- slice the potato(es) into chips at most quarter of an inch
- you will need a baking sheet (at minimum 8 x 12)
- grease the sheet with a tablespoon (or a little less) of butter (those who believe or are on strict orders from physicians to avoid butter can use alternatives like baking or cooking oil recommended by said physicians or dietitians/nutritionists)
- lay the chips evenly onto the pan/sheet and sprinkle with black pepper and thyme to taste.
- bake for approximately 15-20 minutes, turning every 5 minutes. Make sure to check often, as they will cook much faster than baking a whole potato and not turning the chips will burn one side to a black crisp (you could also preheat the oven to 350 and cook them for 35-40 minutes, turning every 5-7 minutes until the starchy flesh softens).
- remove from the oven, place chips into a mixing bowl, and season more to taste if desired (another tablespoon of butter if desired).

I just finished making a huge bowl of egg & potato salad.

That's a start. there's definitely a bottle of Evan Williams and a pot of black coffee to go with it.

Probably gonna make a pan of baked vegetables and beef summer sausage. Basically, you rough chop a large sweet onion, a green pepper, a couple potatoes, the sausage, a small-medium zucchini, and summer squash. Toss them together in a large bowl with some Italian dressing, and then dump into a large glass pan and bake at 350 degrees for 45 minutes or so. Just until the veggies are tender and the sausage starts to char.

You can eat it as is, or with rice, or spoon into sub rolls for sandwiches. It's all good :)

Gonna have some Chex Mix too.
 
Just got a smoker. So have 2 chickens in there now and doing a Brisket early tomorrow. Everything else on the menu is irrelevant.
 
Super Bowl is always BBQ. I don't smoke myself because it takes forever to get the smoker right in the cold. I go to Tennessee's BBQ and get a healthy mix of Memphis, baby back, and beef ribs along with pulled pork, burnt ends, and brisket.

This....except I am doing 3 racks of ribs, a brisket, a pork shoulder for pulled pork, and a half dozen pork chops soaked in apple cider and jack daniels

The starch is a tater tot casserole.......

I smoke on a small Weber, so I love using it in the colder weather. Much easier to get the temps constant than in the summer.

I just rubbed the pork shoulder and put it in the fridge. Tonight I'll fire up the smoker and put it on. Will get up every 3 hours to add coals. Thank god for my remote thermometer!

So the menu will be:
- smoke pulled pork sandwiches
- deviled eggs
- marinated beef kabobs
- chips + salsa

And the wife is making cookies with Pats-colored icing, I believe.

Also, sorry Uncle Rico, but there will be salsa and queso dip.
 
I will keep it simple.

At 9am i will order a larger double cheese pizza and cheese sicks from dominoes, before i watch the entire first season of game of thrones before kickoff.

Oh man- we did a brisket for a buddy's birthday party not long ago so I don't have the scratch for another one BUT...

We are doing home-made subs, chicken wings, potato wedges and have plenty of snacks/salsa.

GO PATS!!

Home made pesto pizza with veggies on whole wheat dough.. want to be light on my feet to do the happy dance.
 
Lamb's brain and tongue cooked in a delicious stew served with Vodka.

It was so nice today my buddy actually launched his boat and we went fishing in February. So now I have some Haddock to get rid of. Pretty much the only way I eat white fish these days is ceviche so that's what it will be. One big ass giant bowl.

1.5lbs-2lbs of cubed Haddock filets dumped into 2-gal ziplock
Fill bag with enough lime juice to cover fish completely, take air out with straw, let marinate in the fridge for 1.5-2 hours. Remove, drain.
Combine three diced bell peppers, one chopped red onion, a handful of chopped cilantro, and one diced avocado in a large mixing bowl.
Season fish to taste, add to bowl with the juice of one lime, and Trader Joe's Habanero Hot Sauce to taste.

Super clean, super good.
