Kind of an odd one, but @NYJ, 2001...
To me, it was the first HUGE game the Brady/Belichick Patriots won on the road in a hostile environment. After that win the team started believing in themselves. It wasn't just the win, it was HOW they won.
If anyone remembers that game, the Patriots trailed 13-0 at halftime. Brady was getting mauled and the NYJ pass rushers were in the backfield all day. Charlie Weis was credited with making a seemingly benign adjustment at halftime, but it ended up changing the tenor of the game.
Brady was doing a lot of 5, 7 step drops on passing downs and he was getting a ton of pressure on him. Weis changed to almost 3 step drops exclusively and shortened up the pass routes. It worked and the Pats went on to score 17 in the second half and the defense stiffened and only allowed a field goal.
Pats took the lead, 17-16, late in the 4th quarter (and IIRC a 40+ yard pass to Fred Coleman, of all people, was a KEY play in the winning drive), but the NYJ and Testaverde got the ball back with a chance to win with a field goal.
The Patriots sealed the game with a Terrel Buckley interception (I think around midfield or the Pats side of the field, can't remember, but it was on the near sideline on TV).
This game was the first close game the Patriots with Brady and Belichick would win on the road with a lot on the table (going into the game, the Patriots were 6-5 and the NYJ were 7-3). Very memorable game for me...
The Monday Night game in Denver where we almost NEVER win was a great one too.
When we did that intentional safety in the 4th quarter I knew somehow we were going to pull it out.

2007 week 2 regular season game against the Chargers.
Obviously Spygate broke out a week before and LT made a classy comment as usual about the Pats (in addition to claiming SD would beat NE 8 times out of 10 or something like that) and Norv Turner had like a confidential team because he was supposedly worried about the Pats stealing their signals. Then the game starts, the confident Chargers go 3-and-out and the Pats march down the field on their first possession that ended with an awesome TD catch by Ben Watson.
2004 AFC Championship vs Pitt
(1) Brady to Branch on a nifty play for a TD.
(2) Harrison picks of Ben for a TD and Vrabel slams Ben to the turf blocking.
(3) The Bus was talking crap to Bruschi and on the next play Bruschi hit him causing the Bus to fumble.
(4) Its always a great time when your team beat the Steelers at home but this game knocked them out of the playoffs.
